Odia cuisine is rich and varied, yet still little known outside India. Chef Dev Biswal grew up with it, and this restaurant is his way of putting it on the table here. We cook with mustard oil, tamarind, jaggery, sun-dried mango and black pepper, ingredients that give our plates their balance, warmth and depth.
